    Just got in from sausage making class (5.00 / 3) (#12)

    so I'm just tuning in to Fringe.

    Class was fun and interesting. We made Chorizo and Breakfast sausage. And came home with a couple pounds :)The instructor is from the local butcher that only carries pastured meats that opened late last year. Looks like I now have a source for natural casings close by so I can actually make links instead of patties :) I'm also thinking of making my raw cat food mixture into links as it would be much easier than dealing with massive amounts of ground. Or should I say neater and cleaner {grin}

    When did Food Network become so useless?

    The programming now is total garbage. I don't care about how candy gets manufactured or the myriad ways a professional baker can use fondant, I want to be inspired to cook new recipes and learn new techniques. The suits at the network apparently decided to just dumb it down instead of focusing on the programming strategies that made it successful in the first place.

    watching him demonstrate how to use a knife with a cutting board. One thing that stuck with me was his admonition to sweep food off of the board with the dull side of a knife.

    that they show on these programs are great! I have learned many little things like the dull side info. It's one of the reasons I started  going to the one night classes at my local cook store. I learned stuff at the ice cream class (beyond ice cream, tools and prep which I had done) and the same tonight with the sausage class. The ice cream class taught me more about making extracts that I couldn't have gotten from a recipe etc, and tonight, discussion went beyond sausage to meat raising, cuts of meat, experimenting, and just all kinds of fun discussion as we ground, seasoned, stuffed and twisted the links into nice pretty packages. I never signed up for the pig butchering class, and now I'm regretting it. They won't start up again until fall when the weather cools, hopefully I'll still be here. The class is really popular and sells out every time immediately. The last one they auctioned off the spots on ebay to benefit Just Food NY. After tonight with a meat guy, I can't imagine what more I could learn during a butchering class :) (I got to see what lymph nodes in a pork shoulder looked like tonight, among other info)

    Only time I have ever screwed them up has been dropping them on the floor. Now that I have a spotty dawg, it's no longer a screw up, but a snack for the Dot! Shell and all  ;)

    I tend to mostly watch just a few of the chef shows. I go by what their recipes generally are made up of and cooking "ideal". I like mostly the fresh, clean (most times quick) and simple approach (very low to no non-fresh ingredients). The other shows like Top Chef and Iron Chef are more for fun and also to possibly hear some interesting ideas to play with later.

    "Peeling the Onion."  That's how I learned about pig butchering!  Some great descriptions. I have no interest in ever actually doing it though.

    DWTS. A shocker. I always thought the final would be her and Melissa. She really didn't deserve to go.  I can't imagine Melissa not winning now, and since she's my favorite, I'm glad for her. But it wasn't the right choice tonight.

    But part of that may have been her maturity compared to some of the others. I was looking at her in the context of someone who would be committing to a dad and son. And she also seemed down to earth with a sense of humor.

    They are increasing the bachelor load for her. Could be amusing. Of course, if I get off the wait list and into the Mon night photo class, I'll be missing it!

    got punished by the Democratic caucus:

    Specter will be treated as the most junior member of those panels -- putting him last in line in speaking time during committee hearings and limiting his influence on those panels. When the Judiciary Committee considers Barack Obama's Supreme Court nominee, Specter will be the last Democrat to speak, and he's last in line to chair the committee if the current chairman, Sen. Patrick Leahy (D-Vt.), steps down.

    The move may have come as shock to Specter. Speaking on NBC's "Meet the Press" Sunday, he said that it's an "entitlement" for him to retain his seniority on those committees.

    "I was elected in 1980. I think that's not a bribe or a give for something extraordinary," he said. "I'll be treated as a Democrat as if I was elected as a Democrat."

    A Democratic aide said Tuesday night that Specter's fate was sealed by comments he made suggesting that he wanted Norm Coleman to win the disputed Minnesota Senate race and by senior Democrats who were angry at the prospect of losing seniority to Specter.

    But Specter also just screwed Pennsylvania. He used his seniority to bring home a lot of money, and now he's lost a lot of power.

    It just makes me think there's been a lot of talking behind the scenes by Dems who know Arlen's all about Arlen, and him having a (D) next to his name wouldn't mean squat.

    He should have just announced he was going to retire at the end of his term.

    the guy's got to be highly conflicted about all this and wouldn't have switched if he saw any other alternative to being humiliated in the primary.  It would take a better man than Specter not to spend some time boing-ing around before he could settle down to the new reality.

    That said, it's one heck of a resounding rejection by the Senate Dems.  Sounds like they've never liked him a whole lot over the years, and not just for political reasons.

    Wonder what he'll do now.  Couldn't happen to a nicer guy, IMHO.  He really is the Lieberman of the GOP in many, many ways.

    The officiating has sckued this series!  They got robbed on a game-tying goal last night and on Sunday, the refs were all over the places, making bad calls and no-calls against both teams.

    And Chris Pronger has always been one of the biggest crybaby whiners in the NHL.....

    At a Senate Finance Committee meeting on health care reform, a meeting where no supporters of single-payer were invited to testify, Max Baucus called for more policeto remove protesters.

    Obama and the senate leadership are determined that we will not have single-payer. And they just might eviscerate the public plan option. Because we certainly can't have a program that gets in the way of parasite corporations and their profits.

    public plan although I know the GOP is whining loudly about the unfair competition from that group.  The public plan will allow the country to move toward a non profit model and that is exactly what we need. In the end it will be the only avenue that can get us to single payer in the future IMHO.

    So sorry - I have no camera.  I do have three nest boxes (aka bird houses) set up around the yard.  Their inhabitants vary from house wren to flying squirrel.  Monday I cleaned up the fallen tree debris and startled a mallard.  A what?  The ornamental water ponds are NOT in my yard.  Those are one and two houses over.

    Tuesday I was spraying weeds over there.  The mallard duck flushed again.  This time I saw the nest and all ten eggs.  My neighbors provided the ponds, but I provided the brushy cover.  No idea how I managed not to trash her nest when I was hauling brush for an hour.  So now I wait for the eggs to hatch because she's nesting on my future vegetable garden.  The kids are getting a kick out of it.

    If you build it, they WILL come!

    I'm envious.  We have mallards hanging about the lake this year, and they are pretty tame around humans. I think a neighbor may have raised them hoping they'd hang out here.  Another thing that causes me to think that is that we have many males and only a couple of females.  They are so cool and Josh loves them.  Animals make us human.  I have always wanted to get one of those bird houses that you attach to a window and has the two way mirror that allows you to watch the chicks grow up.  I put it on my list of things to get and it keeps getting pushed to the back.

    There are plenty of larger bodies of water within mile or two - good sized lake and a major river and even a small abandoned farm pond.

    I thought about putting some food out for Mrs Mallard, but I figured that if she laid ten eggs that she isn't hurting for food.  I'm sorry I removed her cover though.

    Incubation is 26-30 days, female incubates alone.  This could take a while.  

    I've decided that I obviously don't have a raccoon or coyote problem or I wouldn't have a duck nest.

    There is an ornamental pond across from our lake and it is owned by one home owner.  They keep a few domesticated ducks and geese on it and they put a chainlink fence up on the road so that dogs can't get in, lots of dogs walk the lake everyday with their masters.  Last year one of the ducks realized how gutsy she could be and she nested against the fence.  She gave us all a view of her motherhood and none of the dogs could get to her, smart bird.  We do have foxes and coons too in our neighborhood but I'm thinking that they avoid the roadways when they can, so being close to the road probably gave her a bit of protection from that too.

    It is a damn fine win.  We live in Coffee County where the latest Supreme Court ruling allowed the evidence of a vehicle that had been searched when officers falsely believed that there was a warrant out on the driver.  It was a "good faith" search.  I have the most boring vehicle in the world full of baby wipes and dog leashes but I'll skip the good faith searches thank you very much.  I'm not anticop but there are some crooked ones around here, I wouldn't want to upset someone and then get set up.

    BTD saying last week that we'd see a much different Specter and he would move toward supporting the Dems hot button issues now that he was out from under the Republican thumb. BTD is generally right on, from where I sit. I don't know in the case of Specter. The only movement I see from Specter is his continued eye-poking of the party.

    I'm sure BTD is right that he will begin to vote better, but in the meantime he's now got to find a way to keep his dignity.  And he will always say contrary things that infuriate people.  He did that regularly with the Republicans, and I can't see his need to do that is going to change now.

    However, I did see a Politico headline that he'd walked back from the Coleman support.  Haven't read the piece yet, though.

    Closer Heath Bell, who has not pitched for 10 days (!) comes in in a non-save situation, which the radio guys explain is ok at home, but never on the road, and they are certain Heath is able to pitch two innings if necessary.

    unless you are the Royals and then they win. BTW, tonight the White Sox vs the Royals in Kansas City, a tie game in extra innings, on the road the White Sox left their closer on the bench (even with the bases loaded)...they lost.

    One thing is certain, most teams won't use the closer on the road in a tie game, and most teams on the road lose that game.

    I was at the Marlins game last night for a 14 inning affair. The Marlins won, the Reds never used their closer.

    Nuggets and Mavericks. I noticed that the Mavs are nervous about this Nuggets series. I don't see that usual Mav swagger [arrogance] in the various local sports reports. The difference I think will be the benches. The Mavs do not get the production from their bench that the Nuggets do.

    Needed to build-up the RBC's, so it was a dual purpose dinner.  Medicinal and delicious--a rare combination indeed, let me tell you.

    I tell ya' Easy D, if they get pushed around this game like they did last time, this series could be over quick.  Dirk needs a bodyguard, that's for sure.  Kidd locked a tad off, so we'll see if that's an isolated incident or a trend.  No matter what, it's always fun to watch Cuban get all excited.

    There's not a whole lot of drop-off between the Nugs starters and the second unit.  Everyone seems healthy and everyone is contributing.  If they ever really get it in their heads that team defense wins championships--look out.

    Allison was great, and Paula was right.  She'd make a great Janis Joplin.

    Adam sounded like a horrible squeaky impression of Led Zeppelin and got props.  And that freaking tongue of his.  I'm sorry, but I don't think every performance should be a tonsil exam.

    I have to think the judges want Allison to win.  I almost voted for her tonight to say screw them. But the vote counting by the certified public accounting firm of Simon & Cowell stopped me.

    West coast, so I only saw the awful Styx performance by Danny and Chris.

    Now Chris.  He isn't so bad.

    Bad performances and all, at least I know that nobody will end the show by holding a scalpel to any woman's pregnant stomach (reference to that horrendous cliffhanger on Private Practice).  So I'll get my brain candy tonight ;-).

    I don't think this is a good night so far, except for Allison.

    beginning of the series?

    It's a fascinating show, the kind where if you look away for a minute you might miss something important.

    Clever idea to keep the commercials so short - not much of anything you can do in 60 or 90 seconds.

    Walter may be my favorite character, because he is such a character; some of his throwaway lines just crack me up.

    most x-files like show since x-files, but easier to follow.  i doubt that they will make the stories multiseason, must know each past detail to enjoy style, so it could stay good for a bit.

    You find yourself crying with them as they rejoice at having lost half of themselves. It is amazing. Tara has won so many challenges. She even pulled that Nascar and tonight won the Marathon. What a inspiration. Next week is the final night.

    Twelve thousand ecstasy pills are discovered after a traffic stop and search?

    Mmm,  very curious, or they knew what to look for didn't they. Actually home land security likely knows where all this stuff is traveling to. Each pill has the potential to be about 125 milligrams. A pretty substantial haul.

    So, I looked up some of the stuff about ecstasy and what chemical composition it is. In one finding there was some suggestions that during the real world war it was used. This drug was discovered in the late 1800 but is not published too well. Also, interestingly is suggested some experiments occurred in the military WWII.  

    Wouldn't it be a hoot if Bush and Company experimented with drugs on the detainee's however kept it secret. Or on our own solders??? Yep...

    One wonders why veterans have problems???

    Pretty soon we will sell perscription drug decals on the coners like the WWII vetarans sell plastic popies.

    TV, but Desperate Housewives has me hooked.  I think I need HBO. I just can't get into any of these 'reality shows' or adventure series.  I liked Boston Legal at first, but the suits at the network keep moving a good show around until its not fun to try to find it and keep up.
